Side Dish – Ham

A friend sent me this recipe and I tried it yesterday. Really simple and absolutely YUM!

BARBEQUED HAM Serves 4
. . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . .
INGREDIENTS

400gms pressed ham
1 onion
4 tsp sugar
4 tbsp Worcestershire sauce
4 tbsp vinegar
1 tsp dry mustard
1/2 tsp paprika
1/2 cup ketchup
2 tsp butter
1 green chilli

PREPARATION
Chop the onion up fine and saute in the butter till golden brown.

Add all the other ingredients, and saute for another 3 minutes.

Add 1 cup of water and let the mixture simmer. Add a little more if required to prevent it sticking, but don’t over-do it. Simmer for 10 minutes.

Shred the ham and add it. Simmer for another 3-5 minutes and take off the heat.

Serve with a cooling salad : A Broccoli salad or more filling Cheese and Pasta Salad, or just a lovely Greek Salad like I did.

STEAK on SPANISH RICE Serves 4
. . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . .
INGREDIENTS
7 tomatoes
1-3/4 cups water
1-1/4 cups long grain rice
1 tsp flour
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon pepper
Dash ground cinnamon
1 1/2 pounds beef flank steak
2 green chillis
2 tablespoons hot pepper sauce
1 tbsp tabasco sauce
1 tbsp ketchup
1 tsp cilantro
4-5 sprigs fresh parsley

PREPARATION
Skewer each tomato with a fork and hold it over an open flame to split open the skin. Skin them one by one, put in a large saucepan with 2 cups of water and boil till pureed.

Eggs – Side Dish

Egg lovers can feast on this one, with or without the ham.

MEXICAN CORN & EGGS Serves 4
. . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . .
INGREDIENTS
1 onion
3 tsps butter
2 cups corn kernels
1 green pepper
1 cup milk
6 eggs
1 cup ham sliced fine
1/2 cup Cheddar cheese
1/2 cup black olives

PREPARATION
Chop up the onion and pepper.

Saute them in the butter till soft. Add the corn and olives. Saute for 3-5 minutes.

Beat up the eggs with the milk and add them to the mixture. Stir regularly till the eggs are just about to set.

Add the cheese and ham, and stir in thoroughly. Add salt if you need any.

Serve hot with tortilla chips and spicy Salsa

Accompliment – Yoghurt & Bread Wadas

An adaptation of an Indian favourite, – Dahi Wada

BREAD DAHI WADAS Serves 4
. . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . .
INGREDIENTS
8 slices bread
4 cups yoghurt
2 tbsps raisins
1 tsp red chilli powder
1 tsp roasted cummin seed
2 tsp sugar
1/4 chopped coriander leaves
salt to taste
3/4 cup oil to fry

PREPARATION
Tear the bread into little pieces and knead it with 2 tablespoons of the yoghurt and the salt. Make them into small balls placing a raisn in the center of each.

Fry in hot oil till crisp and pale brown. Then set aside on paper to drain and cool.

Beat up the rest of the yoghurt with the sugar till smooth. Add a pinch of salt if required.

Drop in the bread balls and garnish with the spices and coriander leaves.

Chill for 15 minutes before serving, longer if possible.

Salad

SUMMER SURPRISE Serves 4
. . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . .
INGREDIENTS
200 gms cabbage
2 large apples
1 1/2 tsp mustard
1/2 tsp pepper
Juice of 1 lemon
Rind of 1 lemon, chopped fine

PREPARATION
Mix the mustard into 3 tablespoons water and let stand for 15 minutes.

Shred the cabbage. Chop the apples and smear with lemon juice so they keep their colour. Add the lemon rinds.

Pour in the mustard, remaining lemon juice and add pepper and salt. Serve chilled.
