SHRIMP MARINARA Serves 6

Choose a version of marinara sauce (check these easy recipes) that you’re happy with and add the following…

INGREDIENTS
1/2 lb. scallops
1/2 lb. shrimp
1 can chopped clams, rinsed & drained
1/4 cup Parmesan cheese, grated

PREPARATION
When your choice of marinara sauce has been simmering about 10 minutes, add all the scallops, shrimp and clams.

Cook uncovered, stirring occasionally, and let simmer for another 20 minutes.

Sprinkle with cheese and serve hot with garlic bread (Try this shortcut even if you can’t imagine making bread).
You can also serve this dish on a bed of pasta.

Children who eat breakfast perform better on standardized achievement tests and have fewer behavior problems in school.
A Harvard University/Massachusetts General Hospital study of children in Philadelphia and Baltimore schools discovered that students who usually ate school breakfast had improved math grades, reduced hyperactivity, decreased absence and tardy rates, and improved psycho-social behaviors compared with children who rarely ate school breakfast. Now when did I last have breakfast? ! Eating breakfast can do wonders for your memory loss. A study done by the University of Toronto on healthy men and women in the age group 60 to 79 showed that taking in calories from either protein, carbohydrates or fat boosted their performance in memory tests. While it appears that any breakfast is better than no breakfast at all, researchers have found that carbohydrates generally fuel the best long-term benefits to memory, probably due to the rise in blood sugar that they cause. Shortcut Garlic bread

Nothing smells better than fresh bread from the oven. And if you’re not going to make the bread yourself you can still get the pleasure of it. This garlic flavored bread enchances any marinara sauce based dish. Why, it’s the perfect complement for almost any Italian dish!

SHORTCUT to GARLIC BREAD Serves 6

INGREDIENTS
1 10-inch loaf Italian or French bread
1/2 cup butter, softened
4 tbsp. finely chopped garlic (or 3 tbsp garlic paste)
2 tbsp. chopped fresh parsley
1 tbsp. lemon juice
Salt and pepper to taste

Preheat the oven to 350 degrees.

Cut the bread in 1-inch intervals with a serrated knife, without cutting all the way through to the bottom.

In a small bowl, combine the butter, garlic, parsley, lemon juice, and salt and pepper. Mix vigorously for a few minutes to bring out the flavours.

Fan out the bread slices and spread 1 tablespoon of flavored butter into each opening.

Close the slices together, place the loaf directly on the oven rack. Bake for 8 to 10 minutes, until heated through.

Serve hot.
