Christmas Cookies

Here are 2 more Christmas cookie recipes, – one simple and one exotic. Enjoy!

GERMAN HONEY COOKIES 200 cookies

INGREDIENTS
3 oz citron
3 oz candied orange peel
3 oz candied lemon peel
1 cup chopped blanched almonds
1 tsp grated lemon rind
3 tbs cinnamon
1 tbs cloves
3 ½ cups confectioners sugar
6 eggs
¼ cup orange juice
1 pint honey
5 cups sifted all purpose flour
1 tbs soda

PREPARATION
Mix the flour and soda with small amounts of water, a little at a time and make a dough. Let this dough stand for 12 hours at least. A good idea is to leave it overnight.

Cut the citron , candied orange and lemon peel into small pieces

Add the almonds, lemon rind, cinnamon, sugar and cloves. (leave aside a few slivers of almonds to decorate the tops of the cookies.

Beat the eggs till light and add the orange juice to it. Beat once more and then add to the mixture.

Add a couple of teaspoons of water to the honey and bring it to boiling.

Pre-heat the oven to 350 degrees.

When the honey is lukewarm add it to the egg mixture.

Now stir all this into the dough, which should have been left standing for at least 12 hours.

Drop the batter from a spoon at least 2 inches apart on a greased baking tray or sheet. Top each Christmas cookie with a few slivers of almonds and pop the tray into the oven and bake till light brown.

Remove immediately and set to cool.

PEANUT BUTTER COOKIES 60 cookies

INGREDIENTS
½ cup brown sugar
½ cup granulated sugar
½ cup butter
1 egg
1 cup peanut butter
½ tsp salt
½ tsp soda
1 ½ cups all-purpose flour
½ tsp vanilla
PREPARATION
Sift the brown sugar and granulated sugar together.

Beat the butter till its soft and then slowly add the sugar, blending till it forms a creamy mixture.

Pre-heat the oven to 375 degrees.

Beat together the egg, peanut butter, salt and soda. Then add in the sugar-butter mixture.

Sift the flour and slowly and smoothly fold it into the egg- peanut butter mixture. Add in the vanilla flavoring.

Roll the dough into small balls, place them on a greased tin, 2 inches apart and gently press flat with a fork, making patterned indents.

Bake for about 15 minutes and then remove and cool.
