Christmas Cookies

CINNAMON ALMOND COFFEE COOKIES 40 cookies

These Christmas cookies are really simple, and have a deep, rich taste just right for a cold Christmas day.

INGREDIENTS
1/4 cup softened unsalted butter
1 cup sugar
5 tsp Amaretto
1 egg
2 cups flour
1 1/2 tablespoons instant coffee granules
2 tsp ground cinnamon
1/4 teaspoon salt

PREPARATION
Preheat the oven to 375 degrees.

Cream the butter and just 3/4 cup sugar in a large bowl until light and fluffy.

Slowly mix the flour mixture into the butter mixture until thoroughly incorporated. Add the Amaretto and the egg and mix well.

In a small bowl whisk together the flour, the coffee, 1 teaspoon cinnamon, and salt.

On a small plate, separately mix together the 2 tablespoons sugar and 1 teaspoon cinnamon. Mixing vigorously helps bring out deep flavors.

Shape the dough into 1 inch balls and roll in the sugar-cinnamon mixture.

Place the balls 2 inches apart on an un-greased cookie sheet and flatten with a cookie stamp or fork, making a light patterned indent. Remember they will definitely spread.

Bake for 8-10 minutes, or until lightly browned. Remove immediately from the pan and cool completely on wire racks.

Store in an airtight container or freeze.
