DOODHI RAITA Serves 6

INGREDIENTS
1 &1/2 cup yoghurt
1 medium size Doodhi (lauki) white bottle gourd
1 tbsp poppy seeds
1/2 tsp jeera powder
2 green chillies
1 tsp sugar (optional )
Salt to taste

PREPARATION
Grate the doodhi and set it aside in water to which a little salt has been added.

Mix the yoghurt thoroughly in a glass bowl, adding sugar, and a little salt.

Squeeze out the doodhi thoroughly and add to the yoghurt. Put it into the refigerator to chill.

Just before serving…
Splutter the poppy seeds in a tablespoon of hot ghee or oil till its fragrances escape. Slit the chillies and add them.

Remove immediately and pour over the yoghurt mixture.

Sprinkle with jeera powder.
Serve!
