MOCHA BAVARIAN Serves 8

INGREDIENTS
2 tbsp gelatine
3 eggs
¼ cup sugar
1 ¼ cup milk
2 tbsp instant coffee
½ cup cream
1 – 2 tbsp brandy
PREPARATION
Dissolve the gelatin in 5 tbsp water.
Whisk egg yolks and sugar with a pinch of salt till pale and fluffy.
In a saucepan bring milk to simmer. Add the coffee, gelatine and brandy. Cool the mixture.
Add eggs yolks and sugar to it.
Cook in a double boiler, stirring constantly till mixture thickens slightly. Cool it.
Chill till partially set.
Beat egg whites stiff (soft peaks form). Add egg whites and cream to the partially set mixture.
Refrigerate till set and firm
To serve un-mould and garnish with grated chocolate or heat chocolate, water and brandy till chocolate melts (pouring consistency) and pour over the un-moulded Bavarian.
