This shortcut pudding is the perfect end to a heayv meal.

PINEAPPLE PIZZAZ Serves 4

INGREDIENTS
1 pineapple chopped into inch pieces (or from a can)
1 packet lemon flavoured jelly
1 packet custard powder
1/2 liter milk
1 tsp cardamom powder
3 tbsp sugar

PREPARATION
If you’re using a fresh pineapple cook the pieces in 1 cup of water and 3 tablespoons sugar till soft.

Lay the pineapple pieces at the bottom of a glass bowl.

Mix together water with the jelly crystals as instructed on the packet and pour over the pineapple. Mix slightly and then place in the refigerator to chill and set.

Just before serving, warm the mik and slowly mix in the custard powder stirring continuously. Stir in 2 teaspoons sugar or more to taste. Let it thicken slighly but ensure that it doesnt become lumpy.

Serve over individual servings of the pineapple jelly.
