Anyone who says they ‘don’t much care for CheeseCake’ should start here. You’ll convert. Promise.

STRAWBERRY CHEESE CAKE Serves 8

INGREDIENTS
12 oz. cream cheese
3/4 cup sugar
3 eggs
1/2 tsp vanilla

For the Crust
1 pkg unsalted crackers or , crumbled
1/4 cup melted butter

For the Sour Cream Topping
1/2 pint sour cream
1/2 cup sugar
1/2 tsp vanilla

For the Strawberry Topping
1 1/2 tbsp cornstarch
1 1/2 tbsp strawberry gelatin
1/2 cup hot water
1/2 cup sugar
3-4 drops red food coloring
2 cups fresh strawberries, sliced

PREPARATION

Place the crackers in a plastic bag and hit lightly with a pestly or heavy spoon until crumbled.

Mix with melted butter. Press into a base in a 10-inch pie plate to form the crust. Set aside.

Preheat your oven to 350° F

Microwave your cream cheese for 30 seconds to soften.

Combine with cream cheese with sugar and beat until smooth.

Add the eggs one at a time, beating well after each addition. Add the vanilla and mix.

Pour the mixture into the unbaked cracker crust and bake 30 minutes at 350° F.; then set aside to cool for 10 minutes.

Meanwhile mix the sour cream, sugar and vanilla in a chilled bowl and pour over the cheesecake. Bake 15 minutes more at 350° F. Then remove and allow to cool.

Mix the ingredients for the strawberry topping together in a small bowl and cook till thickened, stirring constantly. Cool. Mix in the strawberries.

Spread over cheesecake. Chill until ready to serve.
