It’s criminal to buy bread crumbs or bread cubes.

It’s criminal to buy bread crumbs or bread cubes. Here’s some instructions on how to make them. Learnt to do them as a matter of course, so many recipes need one or the other. And when you’re short on something tossing in a few fried bread cubes helps bulk up a dish or adds a nice touch to a salad.

Bread cubes
Cut bread slices into 1/2-inch pieces. Spread them in a single layer in a shallow roasting pan.

Bake in a 300 F oven for 10 to 15 minutes or until dry, stirring twice. Cool.

If you have the time, let bread cubes stand, loosely covered, at room temperature for 8 to 12 hours.

For bread Crumbs
Start tossing the last few stale slices of your daily bread loaf into a tray in the oven. Turn the oven on for just five minutes, and then leave the bread there to dry out.
Next day, take out yesterday’s bread, put it into a zipper storage bag, and put today’s bread in and repeat the 5 minutes of oven time. Dried out bread doesn’t get stale and different kinds of bread mixed together actually improve the taste!
To make the dressing, roll a rolling pin over the bread-filled zipper bag till it looks like the store-bought variety.

To make stuffings for any dish, add sauteed onions and celery, and season with sage, parsley, salt, pepper — or just about anything your family likes. Moisten with chicken broth, milk or water, and voila! there it is!
