Further defense of ‘french fries’
Like I said, I love french fries, its always my first choice on a snack menu, even knowing how lethal it is. So here’s an Oriental version that turned out surprisingly good. It may not exactly suit your burger, but what the hell…

STIR FRY (ORIENTAL) FRENCH FRIES Serves 4

INGREDIENTS
4 potatoes
3 tbsp cornstarch
1/4 cup chili sauce
2 small green peppers
4 spring onions
2 tablespoons honey
2 tablespoons vinegar
1/2 teaspoon soya sauce
1 teaspoons salt
1/4 cup oil (preferably canola or olive)
PREPARATION
Slice the potatoes into slim strips. Soak in 3 cups water and 2 tablespoons of salt. Let stand for at least 30 minutes.
Meanwhile in a bowl, mix together the chilli sauce, honey, vinegar, soya sauce and salt. Set aside.
Chop the sprig onions and peppers fine and set aside
Now roll the potatoes in 1 teaspoon oil and then in a plate of cornstarch
Heat the oil in a wok or non-stick frying pan.
Keep tossing the potatoes till nice and crisp. Then remove and set aside. You might have to do this in batches, so use a little oil at a time.
Remove all of the oil from the wok leaving just about 2 tablespoons and put it back on the burner.
Add spring onions and green pepper and cook them for barely 30 seconds.
Pour in the chilli sauce mixture. Give it a few turns and add the cornstarch coated french fries, – toss till completely coated.
Serve immediately. Yummm.
Tip : The slimmer your potato is sliced, the quicker it cooks, and so the less oil you use.
