Ham Soup

A great filling soup

BEAN and HAM SOUP Serves 8

INGREDIENTS
1 pound dry Great Northern beans
8 cups water
12 baby carrots
1 cup chopped onion
1/2 pound chopped ham
1/4 cup ketchup
salt and pepper to taste

PREPARATION
In a large bowl, heat water to boiling, then take off the heat, add the beans, cover and let it soak overnight.

In the morning, combine the soaked beans with water, carrots, onion and ham in a large pan over medium high heat. Add more water to cover all, if necessary. Bring to a boil, then reduce heat to low and let simmer for 4 to 6 hours. A pressure cooker should do the job in an hour.

Add ketchup just to get the desired color. Season with salt and pepper. Serve steaming hot.
