Healthy Snacks – Pita Pizza

PIZZA in MINUTES Serves 6

INGREDIENTS
6 small pita slices, pizza rounds or tortillas
2 tomatoes
½ cup grated cheese
1 ½ cup thinly sliced pepperoni or chicken sausage
½ cup sliced olives
2 tbsp ketchup
PREPARATION
Chop the tomatoes up as fine as possible and mix with the ketchup and 1 tablespoon water. Let stand for 10 minutes if you have time. Spread thinly over the pita slices.
Top evenly with the sausage slices, then olives and finally with the cheese.
Bake on a pie plate or cookie sheet at about 350F in an oven or toaster oven for about 5-7 minutes. Watch it so it doesn’t burn.
They can also be cooked in a microwave oven, but the crust doesn’t crisp as well. Serve!
The beauty of these are that the toppings can be as imaginative as you are. Vary the ingredients and you could probably have a different pizza every week.
