Main Course – Rice, Soya

SOYA MINCE WITH RICE Serves 6 *Vegan*

INGREDIENTS
2 large onions, chopped
3 large carrots, peeled and chopped
2 potatoes, peeled and cubed
2 green or red pepper, seeded and chopped
400gms Soya mince
Chopped parsley
1 long chili, slit
2 cloves garlic, chopped fine
1 tsp sugar (optional)
1 tbsp Soya sauce
1 tsp tomato ketchup
2 ½ cups rice
2 tablespoons (45ml) vegetarian cooking oil
PREPARATION
Soak the Soya mince in 2 cups of warm water for an hour.
Meanwhile, put 3 cups of water to boil and add the rice and a teaspoon of salt, or to taste. Lower the heat and let it simmer till the rice is well cooked, but in nice loose grains. Add more water if required.
In a large pot, heat the oil and fry the onion till pale gold. Add the garlic and the chili and fry for another minute.
Add the carrots, potatoes, peppers and 1 cup water. Cover and simmer for 5 minutes.
Add the Soya mince and remaining three cups of water. Stir well and simmer for 30 minutes or until vegetables are cooked. Stir regularly to prevent the mixture sticking to the bottom of the pot.
Add the sugar, Soya sauce and ketchup, just for a tangy taste, stir a couple of minutes and take off the heat.
Place the rice on a large serving plate and pour the Soya mixture around it in a ring. Sprinkle with parsley and serve. Or serve separately.
