Whatever you call it, eggplant, brinjals, auberjines, this vegetable has it’s hot fans or haters. But it can certainly be made into some delicious dishes.

BRINJAL – SOYA MINCE CASSEROLE Serves 6

INGREDIENTS
10 small brinjals
3 onions
3 green chillies
250gms soya mince or nuggets
1/2 cup chopped coriander
2 cloves garlic
1/2 tsp red chilli powder
Salt to taste
3 cups marinara sauce
1/2 cup cornflakes
1 tsp butter

PREPARATION
Soak the Soya mince for about 2 hours.

Meanwhile make the marinara sauce and set aside.

Slice the brinjal into thin rounds. Deep fry the brinjal slices and lay out on paper to drain the oil.

Meanwhile saute the onions till golden brown. Add the chillies, coriander, chopped garlic and cook for a few more minutes then set aside

Add the soya mince and salt as required and cook for 10-15 minutes till done. Add the marinara sauce and cook for another 2-3 minutes.

In a flat dish layer the slices of brinjal. Spoon on the soya-marinara mixture and spread evenly. Continue with another layer of brinjals and finish off with the soya-marinara layer top-most.

Crush the cornflakes and sprinkle them thickly over the entire dish. Add small dollops of butter hear and there and pop under a grill for just 2-5 minutes.

Serve hot with bread rolls or garlic bread.

Tip : Hard-core meat eaters can substitute the soya mince for the real thing. Cooking time for the mince meat would of course increase drastically.
