CHEESE & MUSHROOMS on TOAST Serves 1

INGREDIENTS
1 cup mushrooms, thinly sliced
1 onion, sliced into thin rounds
3 cloves garlic
1 chilli chopped fine
1 tsp oregano
1 tbsp soya sauce
1 tbsp ketchup
Pepper and salt to taste
1/4 cup shredded low-fat cheddar cheese
2 slices whole-wheat bread
PREPARATION
Saute the onions till translucent. Then pop in the garlic and stir about 2-3 minutes.
Add the chilli and the mushrooms and saute for another 5-7 minutes.
Meanwhile place the bread in the toaster, just enough to get it warm. (I like it crispy though)
Add salt and oregano to the mushrooms, stir and take off the heat. Set aside.
Mix the soya sauce with the ketchup.
Pop the toast onto a plate, spoon the mushroom mixture generously onto both toasts.
Sprinkle with pepper, spoon on the sauce mixture, and cover with the shredded cheese.
Pop under the grill and leave for 5-7 minutes or till the cheese starts turning golden.
Enjoy.
