TZATZIKI Serves 4
. . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . . .
Yoghurt, garlic and cucumber dip (Zatziki, tzatziki, tsatsiki )

INGREDIENTS
2 cups thick yogurt
1 Cucumber
4 cloves garlic
2 tbsp Olive oil
1 tspn white Vinegar
Diced dill (if available)
Salt & Pepper to taste

PREPARATION
Grate the cucumber and strain using a cloth until very dry.

Crush the Garlic. Mix in all the other ingredients.

Make the Tzatzíki several hours before you intend to serve it, to enable the garlic to permeate the yoghurt.
