MASHED POTATOES Serves 6

INGREDIENTS
8 potatoes, peeled and cut into quarters
1 cup milk
2 cloves garlic.
Pepper & Salt to taste
1 tsp butter
PREPARATION
Crush the garlic into the butter and set aside.
Set a large pot of water to boil with a tablespoon of salt and add the potatoes.
Boil till soft, take off the stove and drain.
Using a potato masher or a fork, mash the potatoes till smooth.
Return to low heat and add the milk. Cook slowly, stirring intermittently till smooth and creamy.
Turn off the heat, add the butter, stir once more and serve with a sprig of coriander or parsley for garnish.
