FLORENTINE RICE with SPINACH Serves 8

INGREDIENTS
1 tablespoon butter
8 ounces fresh spinach, rinsed and torn into pieces
1 red bell pepper, seeded and chopped, about 1/2 cup
1 cup finely chopped onions
3 cloves garlic, minced
1/4 teaspoon seasoned pepper
salt, to taste
1/4 teaspoon dried rosemary, crushed
4 cups long-grain rice
1/2 cup fresh grated Parmesan cheese
PREPARATION
Put the rice into 4 cups of water with a teaspoon of salt and bring to a boil. Then lower the heat and let it simmer till almost done, but let the grains be loose. Add a little extra water if you need to. Set aside without draining the water, it will probably all be soaked in.
Melt butter in a large skillet over medium heat.
Sauté the spinach, bell pepper, onions, and garlic until tender, or for about 10 minutes.
Add remaining ingredients and cook, stirring, until well blended and cheese is melted.
