Salad or Dip

This cooling salad needs no excuses. It works as an accompliment for almost any spiced Indian meal

CUCUMBER & ONION RAITA Serves 6

INGREDIENTS
2 cucumbers, diced in small cubes
3 onion, thinly sliced
2 cups yoghurt
3 cloves garlic
2 tbsp fresh mint, finely chopped
2 green chili, finely chopped
1 tsp mustard seeds
1 tsp cumin seed powder
1/2 tsp red chili powder
salt
freshly ground black pepper

PREPARATION
Crush the garlic into 3 teaspoons of oil and set aside.

In a bowl mix the yoghurt till smooth. Add the cucumber, onion, mint, chillies and mix well. Season with salt and freshly ground black pepper.

Transfer to a serving dish. Splutter the mustard seeds in the heated garlic oil. Pour them sizzling onto the yoghurt. Sprinkle over with the cumin powder and the red chili powder.

Chill for at least an hour before serving.
