MANDARIN SALAD Serves 8 as a side

INGREDIENTS
1/4 cup sliced almonds
1 tbsp sugar
5-6 heads bibb lettuce
2 medium stalks celery
2 green onions
1 11oz. can mandarin oranges

For the Dressing
1/4 cup vegetable oil
2 tsp vinegar
1/2 tsp salt
1 tbsp sugar
1 tsp parsley
½ tsp pepper
½ tsp red pepper sauce

PREPARATION
Cook the almonds and sugar over a low heat, stirring constantly for 8 to 10 minutes until sugar is melted and almonds are coated. Cool and break apart.

Combine the dressing ingredients in jar, cover tightly, and shake.

Tear the lettuce into bite-sized pieces; toss with dressing, chopped celery, thinly sliced onions, drained orange segments, and almonds.
