Side Dish – Vegan

This simple pie can be made into a pure vegan dish. The bread in it makes it really filling.

TOMATO ONION PIE Serves 8 *Vegan*

This recipe can be made strictly Vegan by eliminating the cheese and using Tofu. Pure Vegan Margarine is also available, use it instead of the butter. Er… is bread vegan? I thought so. Do write in and let me know for sure.
INGREDIENTS
5 tomatoes
4 onions,
1 chili
2 capsicums
2 potatoes
5-6 thin slices of bread.
2 tbsp butter
2 cup grated cheese OR Tofu
2 cups cornflakes, crushed
1 tsp sugar
Salt & Pepper to taste

PREPARATION
Grease a baking pan. Sprinkle a little of the cornflakes to coat the bottom.

Puree 1 tomato and 1 onion in the blender with the chili, salt, pepper and oregano. Sauté the mixture in olive oil with a teaspoon of sugar and let it simmer for 10 minutes. Set aside.

Cut the remaining vegetables into thin rounds slices.

Boil water and boil the potatoes for just 5 minutes and drain. They mustn’t become so soft that they break.

Pre-heat the oven to 200C.

Cut the bread slices into quarters and butter them.

Place a layer of sliced tomatoes, and over it a layer of sliced onions.
Sprinkle a thin layer of the cheese or tofu.
Then add a layer of capsicum, and a layer of potatoes.
With a tablespoon pour over enough tomato puree to thinly cover.
Cover with a layer of bread and butter slices, buttered side up.
Sprinkle lightly with the crushed cornflakes.

Repeat the layers till your baking dish is full, ending with a layer of bread. Add a couple of extra dollops of butter, and coat the top with the remaining cornflakes.

Put the dish into the oven and bake for 20-25 minutes.
