Side Dish – Vegetarian

This quick simple recipe uses just ordinary potatoes, but you can replace them with sweet potatoes.

SWEET, POTATO BALLS Serves 8

This recipe uses just ordinary potatoes, but you can replace them with sweet potatoes.

INGREDIENTS
10 potatoes
1/4 cup butter (or margarine)
1 tsp salt
3 cups cornflakes cereal, crushed
3/4 cup real maple syrup

PREPARATION
Boil the potatoes with 1 tablespoon salt in hot water for about 20 minutes. Drain, skin and mash them with the butter or margarine.

Make 2 inch diameter balls with the potato mixture. Roll them in the crushed corn flakes.

Spread the remaining crushed cornflakes in 9 x 12 inch greased baking dish. Place the balls over it and maple syrup evenly over all the balls.

Bake at 325 degrees F (165 degrees C) for 40 minutes. Serve hot.
