Soup – Vegetatarian

The great thing about this soup is that really any ingredients you can get hold of easily or seasonally will do. Just no fat or any kind. It’s perfect for a diet.

WONDERFUL VEGETABLE SOUP Serves 6

The great thing about this soup is that really any ingredients you can get hold of easily or seasonally will do. 1 odd pepper, a few mushrooms left over in the refrigerator…anything! If you’re on the General Motors diet, very strictly, then you’re not supposed to add potatoes, but I do otherwise. Just no fat or any kind.

INGREDIENTS
2 potatoes
6 medium tomatoes
5 medium onions
10 French beans
1 ½ cup cauliflower
1 green pepper
3 cups white bottle gourd (doodhi / lauki) chopped
2 chillies (optional)
½ cup brown vinegar
Salt and Pepper to taste

PREPARATION
Chop up all the vegetables into large pieces and put into a large pan of water. You don’t need to totally submerge the vegetables in water, just ensure they don’t burn. Add the salt pepper and vinegar and boil till tender
Alternately pop everything into a pressure cooker with 4 –5 cups water and cook for 25 minutes.

Let it cool. Then blend in the food processor using whatever water you had already added and check for salt.

Serve hot, diluting with a little water as needed.
I refrigerate the whole amount, serve out only as much as I want each time, reheat and mmmm….
