Making yogurt at home is a daunting task for many. Some people make it perfectly everytime, others can just never get it to set. And if you belong to the latter category with today’s ready-made shop variety, one may wonder if the grief is worth it.
There are lots of conditions on which this setting depends, the weather, the bowl – earthen is best, glass – second; the quality of milk, the timing.

If it’s cold it takes longer, which means it might sour before it sets. If it’s hot, just a couple of hours will do and after that its lost.
A tip for the cold is to place the warm bowl inside an insulated container. But then again, watch your timing!
Another is to warm an oven very slightly, swich off and leave the yogurt inside.

Checking out what the internet has as tips for yoghurt-making, I was aghast at all the gadgets, technology, heating-pads, and time that seems to be required.
Here follows the theory that most Indians grow up with, but the practical perfection may or may not be written in your stars. Take your chances :)

YOGHURT ( Yogurt, curds, dahi ) Serves 6

INGREDIENTS
1 litre full cream milk
1 tbsp sour yoghurt, as starter
5 tsp sugar ( optional, if you want the yogurt pre-sweetened )

PREPARATION
Bring the milk to a boil, then lower the heat and allow to simmer for 5 minutes.

If you plan to sweeten it, add the sugar and simmer for another 5 minutes. Remove from heat and allow it to cool to room temperature.

Coat the inside of the bowl in which you are going to set the yoghurt, with some of the starter. Add the remaining starter to the milk.

Gently pour the cooled milk into the bowl. Cover with a plate and cover completely with a towel.

Leave overnight in a warm place.
If you’ve acheived perfection, by morning it should be firm enough to cut with a knife.
Chill.

    Tip : Want to make your own fruit yoghurt? Start with a non sweetened version. For every serving, stir in a couple of tablespoons of fruit concentrate, bottled strawberry crush, or of course pulped fruit.
